Cool Off This Summer With Fruit and Yogurt

There's nothing more refreshing than a frozen treat during the dog days of summer.

Here are 3 simple nutritious options using farm fresh produce.

Watermelon Granita

Ingredients:

  • 4 cups of cubed watermelon seeded
  • Juice of 1/2 of a lime
  • 1/4 cup sugar


Throw everything into the blender and puree.

Pour into a shallow dish.

Freeze at least one hour.

Scrape off top layer by layer with a fork and serve with a garnish of lime or fresh mint leaves.


Yogurt Dots

Ingredients:

  • Greek yogurt in the flavors you prefer already blended (these will have some color which is a benefit!)
  • or
  • Plain Greek Yogurt you flavor yourself and food coloring (or pureed with fresh fruit)
  • Ziplock bags
  • Parchment paper 
  • Shallow pan with a lip


Open yogurt and stir. If flavoring your own, add a few drops of flavoring or fresh juice and food coloring.

Turn ziplock bag inside out and hold in your palm with your hand inside. Scoop about 1/4 cup of the yogurt into the corner of the bag. Flip right side out, squeeze out most of the air and push mixture to one corner. Cut tiny tip off of corner and pipe yogurt onto parchment lined pan in about 1/2' dots.

Freeze at least one hour. Transfer to a container and freeze until use.


Yogurt Covered Blueberries on a Stick

Ingredients:

  • Blueberries
  • Greek Yogurt (we used vanilla flavored but you can use whatever you like)
  • Wooden skewers or lollipop sticks
  • Parchment paper 
  • Shallow pan with a lip

Wash and dry blueberries.

Thread 4 berries onto the very end of the skewer. Leave about an inch and cut skewer. Thread 4 more, leave an inch and cut. Thread 4 more, leave an inch and cut off tip. Make sure ends are smooth if little ones will be eating them.

Put about 1/2 cup of yogurt in a shallow dish. Roll berry skewers to cover. Lay on parchment lined dish. Let freeze at least an hour.

Experiment with other fruits and flavorings! These are so easy and open to variation.
